Walnut Grilled Chicken Salad with Apple Chips
This salad recipe topped with rotisserie chicken from the deli combined with toasted walnuts, red onions, apple chips and blueberries tastes fresh and delicious.
Ingredients

2 cups | Rotisserie chicken, from the deli, shredded or cut into strips |

6 pieces | Ciabatta bread, 1 in diagonal sliced |
1 Tbsp. | Olive oil |
4 Tbsp. | Cream cheese softened |
2 Tbsp. | Blue cheese, crumbled |
12 oz. | Green leaf lettuce, chopped |
18 | Apple chips, dried |
1/2 cup | Red onion, thinly sliced |
1/2 cup | Walnut pieces, toasted |
1/2 cup | Blueberries |
1 1/2 cups | Raspberry walnut salad dressing prepared |
Directions
Place chicken on foil-lined baking sheet. Cover and heat in a 350° Fahrenheit oven 8 to 10 minutes, or until heated through.
Brush both sides of sliced bread lightly with olive oil. Arrange on baking sheet and toast in preheated oven at 400° Fahrenheit for 4 minutes or until golden. Cool.
Combine cream cheese and blue cheese in a small bowl. Spread on each crostini.
To serve: in a large bowl, combine the lettuce, red onions, walnuts, and blueberries. Place salad mix on a large platter then top with the chicken and apple chips.
Serve with blue cheese crostini and your favorite dressing.
