Tropical Treasure Diced Chicken Salad
Rotisserie chicken, from the deli, diced or shredded
Asian sesame-ginger dressing
Rice, cooked and chilled
Sliced avocados tossed in fresh lime juice
Snow peas, blanched
Mandarin orange slices, drained
Pineapple rings, drained
Green onions, minced
Prepare rice according to package directions and set aside to cool. Mix chicken with dressing. Reserve 2 tsp. to drizzle over salad.
To serve, place 1 cup rice on plate and add 1/2 cup chicken mixture on top.
Arrange 2 slices of avocado, 4 snow peas, 2 Tbsp. of orange slices, 1 pineapple ring and 3 tomato wedges around the chicken.
Sprinkle 1 tsp. onions over chicken and drizzle with remaining salad dressing.
