Thai Spiced Chicken Salad

This salad is a unique twist on a traditional chicken salad. The recipe inspired by Thai spices includes red curry paste, pineapple and peanuts.


2 cups

Rotisserie chicken, from the deli, shredded

1/2 cup

Low-fat mayonnaise

1 tsp.

Thai red curry paste

1/4 tsp.


1/2 cup

Diced pineapple


Scallions minced

4 cups

Mixed greens

1/2 cup

Chopped peanuts

1/4 cup

Light vinaigrette dressing


  1. In a medium bowl, combine mayonnaise, curry paste, and salt. Add chicken, pineapple, and scallions, and stir to combine.

  2. Place 1 cup of mixed greens on each of 4 plates, drizzle with dressing, and top with chicken salad.

  3. Garnish with chopped peanuts and serve immediately.
