Strawberry Balsamic Chicken Salad
A light, refreshing salad recipe consisting of crisp romaine, tender spinach, strawberries, pecans, shaved parmesan and balsamic seasoned diced chicken.

3 cups | Rotisserie chicken, from the deli, shredded or diced |

1 cup + 2 Tbsp. | Balsamic vinaigrette, prepared, divided |
1 lb. | Romaine lettuce, chopped |
1 1/2 lb. | Strawberries, sliced horizontally |
1/2 cup | Glazed pecans |
1/2 cup | Parmesan cheese, shaved |
Directions
Place diced chicken in a microwave safe bowl with 1/2 cup balsamic vinaigrette.
Microwave on high for 2-3 minutes, or until warm.
In a large bowl, combine romaine lettuce, spinach, strawberries, and 1/2 cup vinaigrette; toss to combine.
Arrange the salad mixture on a large platter. Top evenly with the chicken, pecans and Parmesan cheese.
Drizzle with remaining 2 Tbsp. vinaigrette.
