Spanish Rice and Meatballs
Bring the Mexican flavors into dinner by combining Spanish rice with meatballs in this family favorite recipe. It's quick, easy and delicious!
Ingredients

12 oz. | Meatballs, from the deli |

2 Tbsp. | Olive oil |
1 | Large onion |
1/2 | Green pepper, diced |
1/2 cup | Celery, diced |
1 tsp. | Chili powder |
1 cup | Uncooked brown rice |
16 oz. can | Crushed tomatoes |
1 cup | Water |
1 tsp. | Salt |
1/2 tsp. | Pepper |
Directions
In a large frying pan or Dutch oven, heat oil on medium-high heat. Add onion, pepper and celery.
Sauté until vegetables are soft. Stir in meatballs, chili powder, rice, tomatoes, water, salt and pepper.
Heat to boiling, stir and cover. Simmer for about 45 minutes or until rice is tender and liquid is absorbed.
