Pepper Jack Ham Breakfast Melt

Savory sliced ham, smothered with pepper jack cheese. This breakfast melt sandwich is perfect to grab and go for any time of the day!


1/2 lb.

Ham lunchmeat, from the deli, sandwich slices


Sourdough english muffins, buttered and toasted

1 Tbsp.

Butter, melted


Large eggs, lightly beaten

1/8 tsp.



Black pepper

2 slices

Pepper jack cheese

4 tsp.



  1. Heat 1 Tbsp. butter in a skillet over medium-high heat.

  2. Combine eggs, salt and pepper in a bowl and mix thoroughly. Pour into skillet. Cook until set, stirring occasionally to scramble. Keep warm.

  3. To assemble single serving: place 1 english muffin on flat work surface, toasted sides up. Spread 1 tsp. mayonnaise on each half.

  4. Layer bottom half of muffin with 1/2 of scrambled egg mixture, 2-3 slices of ham, and 1 slice of cheese. Close sandwich with top half of muffin.

  5. Transfer to sheet pan and bake in preheated conventional oven at 300° Fahrenheit for 10 to 12 minutes or until cheese is melted and sandwich is thoroughly heated. Remove from oven and arrange on plate.

  6. Serve with fresh melon and strawberries.
