Oriental Express Soup
Asian flavors make this Oriental express soup recipe a family favorite.
Ingredients

1 | Rotisserie chicken, from the deli, shredded |

8 cups | Low sodium fat free chicken broth |
1 tsp. | Minced ginger root |
1 tsp. | Chili garlic sauce |
1 tsp. | Soy sauce |
2 | Green onions, minced |
4 cups | Baby spinach leaves |
1/2 cup | Grated carrot |
1/2 cup | Frozen green peas, thawed |
1 tsp. | Lime juice |
Add | Chopped cilantro |
Directions
In a 4-quart pot place the broth, ginger root, chili garlic sauce and soy sauce. Bring to a boil, reduce the heat and simmer five minutes.
Stir in the rest of the ingredients and cook two minutes more.
Garnish each serving with cilantro.
