Orange Pomegranate Tenders Salad

A fresh and flavorful salad recipe featuring chicken tenders on a salad of baby greens, drizzled with orange-pomegranate vinaigrette.



Chicken tenders, from the deli

2 Tbsp.

Pomegranate juice

2 Tbsp.

Orange juice

1/8 cup

Champagne vinegar

2/3 cup

Olive oil


Kosher salt and course-ground pepper to taste

1 bag

Salad green mix with red cabbage and shredded carrots

1/2 cup

Mandarin orange segments, drained

1 Tbsp.

Sliced almonds, toasted

1 Tbsp.

Pomegranate seeds


  1. Combine the pomegranate juice, orange juice and champagne vinegar in a medium bowl.

  2. Slowly drizzle in olive oil while whisking until combined. Set aside.

  3. Divide salad green mix among 4 salad plates. Top each salad with orange segments, almonds, pomegranate seeds and chicken tenders.

  4. Drizzle with pomegranate dressing.
