Mango Honey Chicken with Mango Slices Glaze

A sweet but tart glaze compliments strips of rotisserie chicken baked to caramelized perfection. Combine mango slices and honey.



Rotisserie chicken, from the deli, cut into strips

2 cups


1 cup

Mango juice

1/2 cup

Light brown sugar


Lemon, juiced


Mangos, peeled and sliced 1" thick


Toothpicks soaked in water for 10 minutes

1 bunch

Basil for garnish


  1. Combine honey, mango juice, brown sugar and lemon juice in a saucepan over medium-high heat.

  2. Bring to boil and cook until glaze coats the back of a spoon, about 5 minutes.

  3. Place chicken on a non-stick cookie sheet. Using a pastry brush, coat chicken with a generous amount of the glaze.

  4. Place mango slices over meat to create a zebra stripe. Insert toothpicks to secure slices into chicken.

  5. Bake chicken at 450° Fahrenheit until just warmed throughout, about 12 minutes.

  6. Remove chicken and discard toothpicks. Garnish with fresh basil.
