Leftover Rotisserie Skillet
One dish meals are perfect for any occasion. This skillet dish pairs juicy rotisserie chicken with vegetables, rice, cheese and cream of chicken soup for a satisfying meal.

3 cups | Rotisserie chicken, from the deli, chopped |
---|---|
10.5 oz | Cream of chicken soup, plus a filled can of water |
1/2 tsp | Salt |
8 oz | Mushrooms, sliced |
5 oz | Baby spinach |
9 oz | Long grain rice, microwavable |
6 oz | Fontina cheese, grated |
Directions
Bring the can of soup, water, chicken, salt, and mushrooms to a simmer in a large skillet. Cook for 10 minutes, stirring occasionally.
Add the spinach and rice and cook for 1 – 2 minutes, stirring until the spinach is wilted.
Add the grated cheese on top and serve.
