Indian Chicken Salad

Give your chicken salad a fresh spin by adding some Indian inspired flavors.


2 cups

Popcorn chicken, from the deli, warm

1/4 cup

Ranch dressing

1 Tbsp.

Curry power

8 cups.

Baby spinach

1/2 cup

Cherry tomatoes, sliced in half

1/2 cup



  1. In a small mixing bowl, mix the ranch with the curry powder together until fully combined.

  2. In a large mixing bowl toss the baby spinach, tomatoes and cashews together. Fold in the dressing and mix until fully incorporated. Portion into the four bowls. Garnish with the warm popcorn chicken.
