Hot and Spicy Southwest Salad
Hot and spicy chicken blends with black beans, onion, jicama, avocado and top with cilantro for this southwest salad recipe.

1 package | Chopped romaine lettuce |
1, 15oz. can | Black beans, drained |
1, 11oz. can | Mexicorn, drained |
1/4 cup | Chopped Red Onion |
1/2 cup | Jicama |
1/2 cup | Monterey Jack cheese, shredded |
1 | Crushed tortilla chips, optional |
1 | Avocado (peeled and pitted) |
1/2 cup | Ranch dressing |
1 Tbsp. | Lime juice |
1 Tbsp. | Chopped cilantro |
1-2 Tbsp. | Milk |
Directions
In large bowl toss together romaine lettuce, black beans, mexicorn, chopped red onion and jicama.
Sprinkle with shredded cheese and tortilla chips. Top off with prepared chicken tenders.
In food processor combine avocado, ranch dressing, chopped cilantro and lime juice until smooth and creamy. Slowly add in milk until desired consistency.
Drizzle over salad, toss and enjoy!
