Ham Wrapped Asparagus

Ribbons of ham wrapped around fresh asparagus and grilled to perfection. The perfect recipe for entertaining guests.

Ham lunchmeat, from the deli, thin sliced

Asparagus spears, seasoned

1 Tbsp.

White wine vinegar

1/4 cup

White wine

2 tsp.

Shallot, chopped

Stick butter, clarified

Egg yolks

Add

Salt and black pepper to taste

Directions

  1. Pre-heat grill on a low setting.

  2. Prepare the asparagus by wrapping each spear with ½ slice of ham, set aside.

  3. Heat the vinegar, wine and shallot in a sauté pan over medium heat until volume is reduced by half. Whisk with the egg yolks in a stainless steel bowl until smooth.

  4. Place the bowl over a pot of simmering water; continue whisking. Be sure to not allow the eggs to scramble.

  5. Slowly drizzle the butter in the mixture while whisking until it thickens and doubles in volume. Add a small amount of hot water into sauce if it becomes too thick. Season to the desired likeness.

  6. Cook the ham wrapped asparagus until tender. Serve hot with hollandaise sauce.
