Grilled Chicken, Avocado and Mozzarella Salad
A salad recipe you assemble in simple layers, starting with creamy fresh mozzarella topped with rotisserie chicken strips, avocado, tomatoes and fresh herbs.
Ingredients
Serves4
1 cup | Rotisserie chicken, from the deli, shredded or diced |
---|---|
1 | Avocado, cut into strips or diced |
1 ball | Fresh mozzarella, sliced |
1 pint | Grape tomatoes, cut in half |
1/2 cup | Walnut halves |
2 Tbsp. | Fresh basil, chopped or julienned |
Add | Olive oil |
Add | Balsamic vinegar |
Add | Salt and pepper to taste |
Directions
Arrange 2-3 slices of mozzarella onto 4 plates. Top with several slices of rotisserie chicken strips.
Add avocado and tomatoes. Top with basil and a sprinkling of salt and pepper.
Lightly drizzle with olive oil to coat, then drizzle very lightly with balsamic vinegar.
Keep chilled or serve immediately.
