Easy Meatball Salsa Soup

So easy you can make this recipe at a moment’s notice! Just mix meatballs, zucchini, beef broth, salsa and cilantro.



Meatballs from the deli

2 cups

Zucchini, diced

2, 14 oz. cans

Beef broth

1 cup

Chunky salsa, prepared

1 Tbsp.

Cilantro, chopped


  1. Combine meatballs, zucchini, broth, salsa and 1 cup water in large saucepan; bring to a boil.

  2. Reduce heat; simmer, stirring occasionally, 6 to 8 minutes or until meatballs are heated through.

  3. Stir in cilantro.

  4. Serve with corn chips.
