Easy Meatball Salsa Soup
So easy you can make this recipe at a moment’s notice! Just mix meatballs, zucchini, beef broth, salsa and cilantro.

2 cups | Zucchini, diced |
2, 14 oz. cans | Beef broth |
1 cup | Chunky salsa, prepared |
1 Tbsp. | Cilantro, chopped |
Directions
Combine meatballs, zucchini, broth, salsa and 1 cup water in large saucepan; bring to a boil.
Reduce heat; simmer, stirring occasionally, 6 to 8 minutes or until meatballs are heated through.
Stir in cilantro.
Serve with corn chips.
