Crazy Chicken Cheese Balls
This crazy chicken cheese balls recipe calls for rotisserie chicken, breadcrumbs, parmesan cheese and finely chopped onions and parsley.
Ingredients

1 | Rotisserie chicken, from the deli, pulled |

2 cups | Plain breadcrumbs, divided |
1 cup | Parmesan cheese, grated |
4 | Eggs, slightly beaten |
1 | Small onion finely chopped |
1/4 cup | Fresh parsley, minced |
Add | Vegetable oil for frying |
Add | Prepared sweet-hot mustard or sweet and sour sauce |
Directions
Pull the meat from the chicken, reserving the skin and bones for use another day as soup stock if desired.
Place the pulled chicken meat in a food processor and process until ground. Repeat until you have 2 cups of ground chicken.
In a large bowl, combine the chicken, 1 1/2 cups of the breadcrumbs, the cheese, the eggs, the onion and the parsley. Mix well.
Shape the mixture into 1 in. balls. Roll the balls in the remaining breadcrumbs. Chill 30 minutes.
Deep fry the balls in hot vegetable oil for about 3 minutes, until golden brown. Drain on paper towels.
Serve hot with prepared sauces for dipping.
