Chinese Chicken Salad with Red Chili Peanut Dressing
Creamy peanut flavor brings a soy-based, chili dressing to a new level in this salad recipe featuring rotisserie chicken.

1/4 cup | Rice wine vinegar |
2 Tbsp. | Smooth peanut butter |
1 Tbsp. | Fresh ginger, chopped |
2 tsp. | Chipotle pepper puree |
1 Tbsp. | Soy sauce |
1 Tbsp. | Honey |
2 tsp. | Sesame oil |
1/2 cup | Canola oil |
Add | Salt and fresh ground pepper |
1/2 head | Napa cabbage, shredded |
1/2 head | Romaine lettuce, shredded |
2 | Carrots, shredded |
1/4 lb. | Snow peas, julienned |
1/4 cup | Cilantro, coarsely chopped |
1/4 cup | Green onions, thinly sliced |
1/2 cup | Toasted peanuts, chopped |
1/4 cup | Fresh mint leaves, chopped |
Add | Grilled lime halves for garnish |
Directions
Whisk together the vinegar, peanut butter, ginger, chipotle pepper puree, soy sauce, honey, sesame oil and canola oil in a medium bowl. Season with salt and pepper to taste.
Combine cabbage, lettuce, carrots, snow peas, cilantro and green onions in a large bowl. Add the dressing and toss to combine.
Transfer to a serving plate and top with chicken strips, peanuts and mint.
Garnish with lime wedges and serve.
