Chicken Parmesan Soup
Rotisserie chicken, from the deli, shredded
|1, 14.5 oz. can|
In a medium pot, heat oil over medium heat. Add onion and cook until softened.
Add garlic and cook until fragrant. Stir in tomato paste, parsley, and oregano.
Add diced tomatoes and chicken broth. Bring to simmer.
Add pasta and cook 5-7 minutes on high heat.
Add rotisserie chicken. Cook through until warm.
Top it off with Parmesan and Mozzarella cheese. Garnish with fresh parsley.
