Chicken Parmesan Soup
Chicken Parmesan soup gives your classic chicken Parmesan recipe a twist. Use rotisserie chicken to have this soup ready in no time!

3 cups | Rotisserie chicken, from the deli, shredded |

3 cloves | Garlic |
1/2 | Yellow onion |
2 tsp. | Parsley |
1 tsp. | Oregano |
1 can | Diced tomatoes |
4 cups | Chicken broth |
1, 14.5 oz. can | Tomato paste |
8 oz. | Penne noodle |
2 Tbsp. | Olive oil |
1 cup | Parmesan, shredded |
1/2 cup | Mozzarella |
Directions
In a medium pot, heat oil over medium heat. Add onion and cook until softened.
Add garlic and cook until fragrant. Stir in tomato paste, parsley, and oregano.
Add diced tomatoes and chicken broth. Bring to simmer.
Add pasta and cook 5-7 minutes on high heat.
Add rotisserie chicken. Cook through until warm.
Top it off with Parmesan and Mozzarella cheese. Garnish with fresh parsley.
