Chicken Cobb Bowl

Turn your favorite salad into a bowl with some ancient grains, rotisserie chicken from the deli, and your favorite toppings.

Ingredients

2 cups

Rotisserie chicken, from the deli, chopped

8.5 oz

Ancient grains, microwavable

1/2 cup

Cherry tomatoes, quartered

2 cups

Arugula

1

Avocado

4

Hard boiled eggs, peeled and quartered

1/2 cup

Blue cheese crumbles

1/2 cup

Red wine vinaigrette

Directions

  1. Heat the grains and chicken together in the microwave for 2 minutes, stirring ½ way through. Portion this mixture into the bottom of 4 bowls.

  2. Top the grain/chicken mixture with the tomatoes, arugula, avocado, eggs and blue cheese into each bowl.

  3. Portion out the vinaigrette using a spoon pouring equal amounts into each bowl. Serve while grains are still warm.
