Canadian Bacon, Egg & Cheese Mini Muffins
These delicious mini muffins are a fun recipe to cook together with the kids. They’ll love the taste of Canadian bacon, cheese and fluffy eggs any time of day.

2 slices | Canadian bacon, from the deli, diced |

6 | Eggs |
1/2 cup | Mild shredded cheddar cheese |
2 slices | American cheese, diced |
Add | Black pepper and salt |
Directions
Preheat the oven to 350° Fahrenheit. Line a 12-section mini muffin tin with decorative cupcake liners. Spray liners lightly with cooking spray.
Whisk the eggs together, and then add the remaining ingredients. Pour mixture into a 4-cup measuring cup with a pour spout for easy filling. Fill each cupcake liner 2/3 of the way full.
Bake for 15-20 minutes just until the tops start to brown. Let cool for 5-10 minutes before enjoying.
