Buffalo Chicken Frittata

Combine the versatility of a frittata and the bold flavor of buffalo sauce and chicken tenders from the deli. It's the perfect recipe for when you just can't decide between breakfast or dinner.

Chicken tenders, from the deli, diced

Large eggs

1 Tbsp.

Franks RedHot sauce

Salt to taste

Pepper to taste

2 Tbsp.

Franks RedHot Buffalo Wing sauce

1/2 cup

Colby-jack cheese, shredded

1/2 cup

Ranch or blue cheese dressing

  1. In a mixing bowl, combine the eggs, hot sauce, salt and pepper. Whisk until combined.

  2. Heat a non stick fry pan over medium heat. Be sure to use a fry pan that is oven safe. Pre-heat the broiler on low.

  3. When the pan begins to warm, spray with cooking spray to be sure the frittata does not stick.

  4. Pour egg mixture into pan. Let eggs cook until almost set, about 5 minutes.

  5. Sprinkle the chicken pieces over the egg mixture evenly. Pour the buffalo wing sauce over the chicken.

  6. Next, sprinkle the cheese over the sauce. By this time the bottom of the eggs should be completely set and the top should be almost set.

  7. Place the fry pan under the broiler for about 5 minutes. Keep a watch on the frittata while under the broiler. It can be done in less than 5 minutes.

  8. Frittata is done when eggs are completely set and cheese is melted.

  9. Take pan out of oven and drizzle the ranch dressing over the frittata. Serve immediately and enjoy!
