Boursin Chicken Bites
This delicious boursin chicken bites recipe is sure to please even the most particular guest and make them think you spent hours in the kitchen.

1 | Rotisserie chicken, from the deli |

30 | Mini fillo shells |
5.2 oz. | Boursin cheese, garlic and fine herb flavor |
1 | Large shallot (minced or substitute red onion) |
2 Tbsp. | Minced flat parsley |
Add | Salt and freshly ground black pepper to taste |
Add | Grated gruyere cheese (or substitute white cheddar) |
Directions
Preheat oven to 375° Fahrenheit.
Remove rotisserie chicken from bone and shred or chop into about 1 ½ to 2 cups. You can use your choice of white or dark meat. Place in a bowl and mix with Boursin cheese, shallot and parsley. Season with salt and pepper.
Place fillo shells on a baking sheet and fill with chicken mixture (approximately 1 tsp. full). Top with a healthy pile of gruyere (about 1 tsp.).
Bake until hot and bubbly, about 10 to 15 minutes.
