Dinner – Ole!

If you’re craving a little Mexicana at home, this recipe is a pretty darn good substitute. It's Quick and Easy Enchiladas!


I liked the minimal amount of ingredients and ease of Sarah’s concoction! There are certainly a huge amount of variations that you could do to this recipe to make it your own. For instance, I prefer red Enchilada sauce and corn tortillas. I also shredded the chicken after I deboned it instead of chopping it...just felt it gave a more authentic texture in my opinion. I mixed about 1/4 cup of the Enchilada sauce into the chicken/onion mixture too, just to flavor it up! 


Put on a sombrero and serve this with some chips, salsa and some guacamole and you’ll have your own little fiesta for dinner! (Second thought, ditch the hat, the kids might think you’ve lost it!)
