Yellow Rice Salad with Rotisserie Chicken
As an easy side or a main dish, this salad features lots of bold flavors and textures. Savory chicken combines with yellow rice, tomatoes and fresh basil for this quick recipe.

1 package | Mahatma or Carolina saffron yellow rice, prepared according to package directions |
1, 10.5 oz. package | Sweet cherry tomatoes |
1 | Tomatoes washed and halved |
2 Tbsp. | White wine vinegar |
2 tsp. | Sugar |
2 Tbsp. | Olive oil |
1/4 cup | Chopped fresh basil |
Directions
Prepare rice according to package direction and set aside to cool. Blend vinegar, sugar, and olive oil and toss it with chicken, tomatoes, and basil
