Ham Apple and Cheese Squares
Ham lunchmeat, from the deli, deli sliced and diced into small pieces
Frozen puff pastry dough (2 sheets per box), thawed in fridge
Finely grated cheddar cheese
McIntosh apples, peeled and sliced into 1/4" pieces
Dijon or honey mustard
Egg with 1 tsp. water, beaten to use as egg wash
Preheat oven to 400° Fahrenheit. Lay both sheets of puff pastry on a lightly floured board. With a sharp knife, cut each sheet into 9 pieces, following fold seams to guide you. You will have 18 squares total.
Take one pastry square and put about 1/4 tsp. dollop of mustard in the middle, spreading around, staying about 1/2 inch away from edges of square. Lay 3 apple slices in the middle of the square, on top of the mustard. Place about 2 Tbsp. of the diced ham on top of the apple and 1 Tbsp. of shredded cheese on top of the ham.
Brush the egg wash around the edges of the square, this will bind the bottom with the top. Take another pastry square and lay it over the top, matching up the edges. Taking a fork, press down lightly with the tines to seal the edges together. With a sharp knife, make a 1-inch slit in the top to allow the steam to escape while baking.
Repeat with the remaining dough to make 9 squares. Place on an ungreased baking sheet and bake for 13 minutes or until golden brown.
*Squares may be folded into a triangle, using half of the inside ingredients and served as an appetizer.
