Walnut Grilled Chicken Salad with Apple Chips

This salad recipe topped with Tyson® Rotisserie Chicken from the grocer's deli combined with toasted walnuts, red onions, apple chips and blueberries tastes fresh and delicious.

Tyson® Rotisserie Chicken from the grocer's deli, cut into strips

6 pieces

Ciabatta bread, 1 in diagonal sliced

1 Tbsp.

Olive oil

4 Tbsp.

Cream cheese softened

2 Tbsp.

Bleu cheese, crumbled

12 oz.

Green leaf lettuce, chopped

Apple chips, dried

1/2 cup

Red onion, thinly sliced

1/2 cup

Walnut pieces, toasted

1/2 cup

Blueberries

1 1/2 cups

Raspberry walnut salad dressing prepared

Directions

  1. Place chicken on foil-lined baking sheet. Cover and heat in a 350 degree oven 8 to 10 minutes, or until heated through.

  2. Brush both sides of sliced bread lightly with olive oil. Arrange on baking sheet and toast in preheated oven at 400 degrees for 4 minutes or until golden. Cool.

  3. Combine cream cheese and bleu cheese in a small bowl. Spread on each crostini.

  4. To serve: in a large bowl, combine the lettuce, red onions, walnuts, and blueberries. Place salad mix on a large platter then top with the chicken and apple chips.

  5. Serve with bleu cheese crostini and your favorite dressing.
