Bahn Mi Tender Sandwich
Ingredients
8 | Chicken tenders, from the deli, Original or Hot & Spicy |

2 cups | California Hot Mix vegetables |
2 Tbsp. | Liquid from vegetable mix jar |
1 Tbsp. | Sugar |
2 Tbsp. | Extra-virgin olive oil |
3 Tbsp. | Diced garlic queen olives |
1 Tbsp. | Asian fish sauce |
1 tsp. | Soy sauce |
1/2 cup | Red onion, cut into 1/4 inch rings |
3/4 cup | Packed cilantro sprigs |
1 | Lettuce leaves |
3 Tbsp. | Mayonnaise |
4 pieces | Sliced bell pepper, sandwich strips |
Directions
Heat oven to 350° Fahrenheit with rack in middle.
Spoon out 2 cups California Hot Mix Veggies, and chop.
Put 2 Tablespoons liquid from the jar in a medium bowl and whisk in the sugar.
Stir in the chopped vegetables; mix well and let marinate for 10-15 minutes.
Meanwhile, heat baguette on rack in oven until crusty, about 5 minutes. Cut off and discard round ends, then split baguette.
Mix together oil, fish sauce, and soy sauce and brush on cut sides of bread.
Spread on bottom layer of bread and top with chiles, onion, and cilantro.
Drain the marinated vegetables. Arrange chicken, marinated vegetables, lettuce and cilantro on the sandwich bottom.
Dice the pepper strips and add to the mayonnaise. Spread top layer of bread with mayonnaise add to the sandwich then cut sandwich crosswise into fourths.
