Tropical Treasure Diced Chicken Salad
This tropical treasure salad recipe combines avocado, mandarin oranges, pineapple rings, tomatoes, snow peas and onions tumbled together with diced rotisserie chicken.

1 cup | Rotisserie chicken, from the deli, diced or shredded |

6 Tbsp. | Asian sesame-ginger dressing |
2 cups | Rice, cooked and chilled |
4 | Sliced avocados tossed in fresh lime juice |
8 | Snow peas, blanched |
4 Tbsp. | Mandarin orange slices, drained |
2 | Pineapple rings, drained |
6 | Tomato wedges |
2 tsp. | Green onions, minced |
Directions
Prepare rice according to package directions and set aside to cool. Mix chicken with dressing. Reserve 2 tsp. to drizzle over salad.
To serve, place 1 cup rice on plate and add 1/2 cup chicken mixture on top.
Arrange 2 slices of avocado, 4 snow peas, 2 Tbsp. of orange slices, 1 pineapple ring and 3 tomato wedges around the chicken.
Sprinkle 1 tsp. onions over chicken and drizzle with remaining salad dressing.
