Thai Spiced Chicken Salad
Rotisserie chicken, from the deli, shredded
Thai red curry paste
Light vinaigrette dressing
In a medium bowl, combine mayonnaise, curry paste, and salt. Add chicken, pineapple, and scallions, and stir to combine.
Place 1 cup of mixed greens on each of 4 plates, drizzle with dressing, and top with chicken salad.
Garnish with chopped peanuts and serve immediately.
