Strawberry Balsamic Chicken Salad

A light, refreshing salad recipe consisting of crisp romaine, tender spinach, strawberries, pecans, shaved parmesan and balsamic seasoned diced chicken.


3 cups

Rotisserie chicken, from the deli, shredded or diced

1 cup + 2 Tbsp.

Balsamic vinaigrette, prepared, divided

1 lb.

Romaine lettuce, chopped

1 1/2 lb.

Strawberries, sliced horizontally

1/2 cup

Glazed pecans

1/2 cup

Parmesan cheese, shaved


  1. Place diced chicken in a microwave safe bowl with 1/2 cup balsamic vinaigrette.

  2. Microwave on high for 2-3 minutes, or until warm.

  3. In a large bowl, combine romaine lettuce, spinach, strawberries, and 1/2 cup vinaigrette; toss to combine.

  4. Arrange the salad mixture on a large platter. Top evenly with the chicken, pecans and Parmesan cheese.

  5. Drizzle with remaining 2 Tbsp. vinaigrette.
