Spinach Salad with Pine Nuts, Avocado and Ham
Ham, toasted pine nuts, blue cheese, fresh avocados, red onions and yellow bell peppers tossed with fresh spinach. Switch up your salad with this tasty recipe!

1 cup | Ham lunchmeat, from the deli, thick sliced |

1/2 cup | Pine nuts |
1 | Large bunch of spinach, steams removed, cleaned, dried |
1/4 | Small red onion, sliced thin |
1 | Small yellow bell pepper, sliced in thin rings |
1 | Large avocado, sliced |
1/4 cup | Crumbled blue cheese |
1/4 cup | Blue cheese dressing |
Directions
Preheat the oven to 300° Fahrenheit. Toss the pine nuts on a sheet pan and bake for 10 minutes. Let cool.
Toss the spinach with the red onions, bell peppers and ham. Portion the salad on four plates.
Top with avocados, blue cheese and dressing.
