Spinach Chicken Salad

Create this quick and easy salad recipe by combining rotisserie chicken, bacon, spinach, red peppers and dressing.


2 cups

Rotisserie chicken, from the deli, shredded


Slices of bacon

6 cups

Baby spinach leaves


Red bell pepper, chopped

1/2 cup

Tarragon salad dressing


  1. In heavy pan, cook bacon until crisp. Drain bacon on paper towels.

  2. Combine spinach, chicken, bell pepper, and bacon in large salad bowl.

  3. Whisk 1 tablespoon warm bacon drippings into Tarragon dressing and drizzle half over salad. Or just serve the dressing as-is.

  4. Toss gently and serve with remaining dressing.
