Spanish Rice and Meatballs
Meatballs, from the deli
Green pepper, diced
Uncooked brown rice
|16 oz. can|
In a large frying pan or Dutch oven, heat oil on medium-high heat. Add onion, pepper and celery.
Sauté until vegetables are soft. Stir in meatballs, chili powder, rice, tomatoes, water, salt and pepper.
Heat to boiling, stir and cover. Simmer for about 45 minutes or until rice is tender and liquid is absorbed.
