Spanish Rice and Meatballs

Bring the Mexican flavors into dinner by combining Spanish rice with meatballs in this family favorite recipe. It's quick, easy and delicious!

Meatballs, from the deli

2 Tbsp.

Olive oil

Large onion

Green pepper, diced

1/2 cup

Celery, diced

1 tsp.

Chili powder

1 cup

Uncooked brown rice

16 oz. can

Crushed tomatoes

1 cup

Water

1 tsp.

Salt

1/2 tsp.

Pepper

Directions

  1. In a large frying pan or Dutch oven, heat oil on medium-high heat. Add onion, pepper and celery.

  2. Sauté until vegetables are soft. Stir in meatballs, chili powder, rice, tomatoes, water, salt and pepper.

  3. Heat to boiling, stir and cover. Simmer for about 45 minutes or until rice is tender and liquid is absorbed.
