Southwest Chicken Frittata

A zesty breakfast omelet loaded with veggies, cheese and chicken tenders. This southwest inspired frittata recipe is great for dinner or breakfast with enough left over for snacks the next day.

Ingredients

Serves4
2 lbs.

Chicken tenders, from the deli, sliced

1

Onion, chopped

1 cup

Mushrooms, optional

1

Red or green pepper, chopped

1/2 cup

Cheddar cheese, shredded

Eggs

1 Tbsp.

Butter or margarine

Add

Salt and pepper

Directions

  1. Mix eggs.

  2. Melt butter in pan and sauté chicken until warmed.

  3. Sauté veggies until tender then add cheese. Cook until done and cheese melts slightly.

  4. Add beaten eggs and let cook. Serve hot with a side of fresh fruit.
