Rotisserie Chicken with Sauteed Mushrooms

An easy recipe for on-the-go evenings. Just combine rotisserie chicken, sautéed mushrooms, onion and chardonnay.

Rotisserie chicken, from the deli

1 Tbsp.

Extra virgin olive oil

4 cups

Fresh mushrooms

2

French shallots or 4 green onions

1 cup

Chardonnay

Directions

  1. Heat the oil in a skillet over medium heat. Place mushrooms in the skillet and cook until tender.

  2. Mix the wine and shallots or onions into the skillet.

  3. Cook until most of the wine has evaporated.

  4. Serve over rotisserie chicken.
