Rotisserie Chicken Salad

A unique twist on a classic recipe, this salad features savory olives, creamy fresh mozzarella, with the crunch of both almonds and pistachios.



Rotisserie chicken, from the deli, shredded

2 Tbsp.

Light olive oil

3 tsp.

Parsley, chopped

3 tsp.

Basil, chopped

12 oz.

Spring lettuce mix


Red onions, thinly sliced

1 cup

Grape tomatoes

15 oz.

Fresh mozzarella, cut into cubes

1 cup

Whole olives, black and green, pitted

3 Tbsp.

Whole almonds, toasted

3 Tbsp.

Whole pistachios


  1. Combine diced chicken with olive oil, parsley and basil; set aside.

  2. Arrange spring mix in a bowl. Top with red onions, grape tomatoes, mozzarella, olives, almonds and pistachios. Finish with chicken.

  3. Serve with your favorite salad dressing.
