Rosemary Garlic Pasta with Rotisserie Chicken
Rotisserie chicken, from the deli, shredded
Yellow onion, small diced
Garlic, fresh, minced
Rosemary, fresh, chopped
Sun dried tomatoes, sliced
Parmesan cheese, shredded
Cook pasta according to package directions in boiling, salted water and drain well.
Melt butter in a large pot over medium heat.
Add onions and garlic, sautéing until soft, about 5 minutes.
Add chardonnay and simmer until liquid has reduced by half, about 1 minute.
Add rosemary, chicken stock, diced chicken and sun dried tomatoes.
Increase heat to medium-high and let liquid reduce for about 8-10 minutes.
Toss chicken mixture with pasta and top with cheese.
