Rosemary Garlic Pasta with Rotisserie Chicken

An Italian pasta recipe that is easy to prepare and delicious. Combine rotisserie chicken, rosemary and garlic to create this family favorite.


2 cups

Rotisserie chicken, from the deli, shredded

16 oz.

Fusilli pasta

6 Tbsp.

Butter, unsalted

1 cup

Yellow onion, small diced

1 cup


2 cloves

Garlic, fresh, minced

1 Tbsp.

Rosemary, fresh, chopped

1 cup

Chicken stock

1 cup

Sun dried tomatoes, sliced

1 cup

Parmesan cheese, shredded


  1. Cook pasta according to package directions in boiling, salted water and drain well.

  2. Melt butter in a large pot over medium heat.

  3. Add onions and garlic, sautéing until soft, about 5 minutes.

  4. Add chardonnay and simmer until liquid has reduced by half, about 1 minute.

  5. Add rosemary, chicken stock, diced chicken and sun dried tomatoes.

  6. Increase heat to medium-high and let liquid reduce for about 8-10 minutes.

  7. Toss chicken mixture with pasta and top with cheese.
