Pulled Rib & Bleu Cheese Crisps
This savory rib dinner topped with a little crunch will really hit the spot.

2 | Ribs, from the deli, meat pulled off the bone, warmed to temperature |
---|---|
12 to 14 | Kettle potato chips |
1 Tbsp. | Bleu cheese crumbles |
1 Tbsp. | Red onion, minced |
1 Tbsp. | Cilantro, whole leaves |
Directions
Assemble the chips by adding a small portion of the rib meat to each chip.
Top the rib meat with a couple small crumbles of bleu cheese.
Sprinkle a few tiny pieces of onion over the top and then garnish with a cilantro leaf.
