Pressure Cooker Lime & Cumin Shredded Turkey
Tortilla chips, from the deli
Crushed frozen garlic
Lime, zested and juiced
Turkey breast, raw, thawed, sliced in half
Using the wire rack designed for the electric pressure cooker, place the rack into the insert of the pressure cooker. Pour in the chicken stock. Add the garlic, lime zest and juice, cumin and tortillas. Place the turkey breast on top of the chips.
Lock pressure cooker and cook on high for 30 minutes.
Release pressure and let rest for 15 minutes prior to pulling apart and using as desired.
Suggested usage includes tacos, serving with beans and rice, or topping a salad.
