Popcorn Chicken Nicoise Salad

Popcorn chicken, from the deli, warm

Small assorted baby potatoes

Tomatoes, cut into 1/8 pieces

Hard boiled eggs, cut into quarters

Olives, sliced

2 cups

Arugula

Italian dressing

Directions

  1. In a medium pot, bring cold water and the potatoes to a boil over medium heat, covered. Simmer for 10 minutes. Using tongs or a slotted spoon, remove the potatoes from the water. Keep the water for the next step. Let the potatoes cool.

  2. In a large bowl, toss together the potatoes, olives, arugula and dressing until combined. Portion this part of the salad into four bowls.

  3. Garnish the bowls with the sliced tomatoes, hard boiled eggs and popcorn chicken, and serve.
