Pesto Pasta with Chicken
Rotisserie chicken, from the deli, shredded
Parmesan cheese for garnish
Bring water to boil and salt heavily.
Meanwhile, chop tomatoes, cut up chicken, mince garlic and open pesto jar.
Once water comes to a boil, add pasta and cook according to package instructions.
In a large saute pan heat olive oil. Add tomatoes and saute for a couple of minutes.
Add garlic and stir until fragrant.
Add in chicken and heat through. When pasta is cooked to al dente, drain and add to chicken tomato mixture.
Stir in pasta. Add pesto increasing or decreasing amount according to liking. Plate individually or into serving dish and garnish with freshly grated parmesan cheese.
