Pepper Jack Ham Breakfast Melt
Ham lunchmeat, from the deli, sandwich slices
Sourdough English muffins, buttered and toasted
Large eggs, lightly beaten
Pepper jack cheese
Heat 1 Tbsp. butter in a skillet over medium-high heat.
Combine eggs, salt and pepper in a bowl and mix thoroughly. Pour into skillet. Cook until set, stirring occasionally to scramble. Keep warm.
To assemble single serving: place 1 English muffin on flat work surface, toasted sides up. Spread 1 tsp. mayonnaise on each half.
Layer bottom half of muffin with 1/2 of scrambled egg mixture, 2-3 slices of ham, and 1 slice of cheese. Close sandwich with top half of muffin.
Transfer to sheet pan and bake in preheated conventional oven at 300° Fahrenheit for 10 to 12 minutes or until cheese is melted and sandwich is thoroughly heated. Remove from oven and arrange on plate.
Serve with fresh melon and strawberries.
