Open Faced Chicken Caprese Sandwich

This Italian-inspired, open faced chicken caprese sandwich is an easy-to-make recipe with pesto and chicken tenders from the deli!

Chicken tenders, from the deli

3/4 cup

Jarred pesto

Slices ciabatta bread or any other crusty Italian bread, toasted

Beefsteak tomato slices, cut about 1/4 inch thick

4

Fresh mozzarella cheese slices cut 1/4 inch thick

3 Tbsp.

Finely chopped basil leaves

Directions

  1. Spread 1 tablespoon pesto on a bread slice.

  2. Top with one tomato slice and one Mozzarella slice.

  3. Cut one chicken tender into thin slices; arrange over sandwich. Repeat to make all sandwiches.

  4. Top each sandwich with 1 tablespoon pesto. Sprinkle with basil, dividing equally.

  5. Serve warm.
