Lemon Oregano Grilled Chicken

A quick and easy meal for dinnertime. The lemon oregano grilled chicken recipe calls for rotisserie chicken and fresh flavors of lemon, oregano and olive oil.

Rotisserie chicken, from the deli, carved into 8 pieces

1 Tbsp.

Lemon zest, grated

1/3 cup

Lemon juice, freshly squeezed

1/4 cup

Fresh oregano, finely chopped

2 Tbsp.

Extra virgin olive oil

1 tsp.

Coarse salt

1 tsp.

Pepper

Lemons, halved

1 sprig

Fresh oregano

Directions

  1. Make marinade: in a small bowl, whisk together lemon zest and juice, oregano, oil, 2 tsp. coarse salt and 1 teaspoon pepper.

  2. Divide marinade between 2 large resealable plastic bags. Divide chicken in each bag; shake to coat. Let marinate at room temperature 30 minutes, turning bags occasionally.

  3. Place chicken pieces directly onto a lightly oiled grill. Cover and cook, until lightly browned, only a few minutes.

  4. Meanwhile, place lemon halves on grill, cut side down; cook until slightly charred, 8 to 10 minutes. Add oregano on top if desired.
