Leftover Rotisserie Skillet

One dish meals are perfect for any occasion. This skillet dish pairs juicy rotisserie chicken with vegetables, rice, cheese and cream of chicken soup for a satisfying meal.


3 cups

Rotisserie chicken, from the deli, chopped

10.5 oz

Cream of chicken soup, plus a filled can of water

1/2 tsp


8 oz

Mushrooms, sliced

5 oz

Baby spinach

9 oz

Long grain rice, microwavable

6 oz

Fontina cheese, grated


  1. Bring the can of soup, water, chicken, salt, and mushrooms to a simmer in a large skillet. Cook for 10 minutes, stirring occasionally.

  2. Add the spinach and rice and cook for 1 – 2 minutes, stirring until the spinach is wilted.

  3. Add the grated cheese on top and serve.
