Ham Wrapped Asparagus
Ribbons of ham wrapped around fresh asparagus and grilled to perfection. The perfect recipe for entertaining guests.

1 1/2 lb. | Ham lunchmeat, from the deli, thin sliced |

40 | Asparagus spears, seasoned |
1 Tbsp. | White wine vinegar |
1/4 cup | White wine |
2 tsp. | Shallot, chopped |
1 | Stick butter, clarified |
4 | Egg yolks |
Add | Salt and black pepper to taste |
Directions
Pre-heat grill on a low setting.
Prepare the asparagus by wrapping each spear with ½ slice of ham, set aside.
Heat the vinegar, wine and shallot in a sauté pan over medium heat until volume is reduced by half. Whisk with the egg yolks in a stainless steel bowl until smooth.
Place the bowl over a pot of simmering water; continue whisking. Be sure to not allow the eggs to scramble.
Slowly drizzle the butter in the mixture while whisking until it thickens and doubles in volume. Add a small amount of hot water into sauce if it becomes too thick. Season to the desired likeness.
Cook the ham wrapped asparagus until tender. Serve hot with hollandaise sauce.
