Grilled Chicken with a Rustic Caesar Salad
Rotisserie chicken, from the deli, diced or shredded
Romaine hearts, large, split lengthwise
Cherry tomatoes, cut in halves
Parmesan cheese, shaved
Salt and pepper to taste
Preheat grill. Lightly brush the cut side of romaine pieces with olive oil. Season with pepper.
Place each romaine heart flat side down on grill. Remove from grill when char marks appear.
Top romaine with tomatoes, parmesan, croutons and dressing. Serve with chicken and enjoy immediately.
