Grilled Chicken, Avocado and Mozzarella Salad
Rotisserie chicken, from the deli, shredded or diced
Avocado, cut into strips or diced
Fresh mozzarella, sliced
Grape tomatoes, cut in half
Fresh basil, chopped or julienned
Salt and pepper to taste
Arrange 2-3 slices of mozzarella onto 4 plates. Top with several slices of rotisserie chicken strips.
Add avocado and tomatoes. Top with basil and a sprinkling of salt and pepper.
Lightly drizzle with olive oil to coat, then drizzle very lightly with balsamic vinegar.
Keep chilled or serve immediately.
