Grilled Chicken, Avocado and Mozzarella Salad

A salad recipe you assemble in simple layers, starting with creamy fresh mozzarella topped with rotisserie chicken strips, avocado, tomatoes and fresh herbs. 

Ingredients

1 cup

Rotisserie chicken, from the deli, shredded or diced

1

Avocado, cut into strips or diced

1 ball

Fresh mozzarella, sliced

1 pint

Grape tomatoes, cut in half

1/2 cup

Walnut halves

2 Tbsp.

Fresh basil, chopped or julienned

Add

Olive oil

Add

Balsamic vinegar

Add

Salt and pepper to taste

Directions

  1. Arrange 2-3 slices of mozzarella onto 4 plates. Top with several slices of rotisserie chicken strips.

  2. Add avocado and tomatoes. Top with basil and a sprinkling of salt and pepper.

  3. Lightly drizzle with olive oil to coat, then drizzle very lightly with balsamic vinegar.

  4. Keep chilled or serve immediately.
