Greek Lemon Chicken Soup
This soup is light and refreshing for the warmer weather. Perfectly prepared in the slow cooker for those busy weeknights!

2 cups | Rotisserie chicken, from the deli, shredded |

6 cups | Chicken broth |
1/2 cup | Lemon juice |
1/2 cup | Carrots, shredded |
1 | Yellow onion |
2 | Garlic cloves, minced |
4 | Eggs |
1 | Large lemon |
Directions
Shred rotisserie chicken.
Chop yellow onion and mince garlic.
Add chicken, onion, carrots, garlic, and broth into slow cooker.
Let cook until onions and carrots are soft.
Whisk together lemon juice and egg yolks. Add to slow cooker.
Cook on high for 10 minutes.
Garnish with lemon zest. Serve.
