Fire and Ice Cucumber Salad

Red pepper and cayenne bring the fire to the ice of cucumbers and onions in this unique salad.

Ingredients

Rotisserie chicken, from the deli, shredded and chilled

Cucumbers, diced

1/2

Yellow onion, diced

4 tsp.

Sugar

2 Tbsp.

Apple cider vinegar

2 Tbsp.

Water

1/4 tsp.

Red pepper flakes

1/8 tsp.

Cayenne pepper

1/8 tsp.

Celery seed

Add

Salt and pepper to taste

Directions

  1. Chop cucumbers and onions and set aside.

  2. Combine all remaining ingredients for dressing in a bowl and mix thoroughly.

  3. Toss cucumbers and onions with dressing.

  4. Serve chilled.
